It’s that time again, back to school time! Let’s talk about meal prepping with kids. It can look very different depending on what stage of life your child or children are in, but doing it can relieve so much of that initial back to school stress.

Meal prepping and planning can be anywhere between planning family dinners for the week to premaking every piece of food you consume. To be fair, most people fall somewhere in the middle. Plus, try getting the kids involved. Here are some tips to get you started.

First step, make a plan. Before stepping in the grocery store, make sure to have an idea of your menu or components of the meals you’re planning for the week.

A great place to start is hitting all of the food groups on MyPlate. If you want the kids to help with the cooking, pick a recipe or two from a kid friendly cookbook. Writing down some meals or ingredients beforehand will save you time and money in the long run. It will also help you not to forget anything.

The next step is choosing a time for you that works best for prep. You will want to pick a day and time that works for your family especially if you are having the kids help. Usually weekends are best with more free time, but this can be any day of the week that doesn’t have long times with homework or extracurricular activities.

After you have your day and time selected, get your ingredients together. Once you get the groceries home, set up a “mise en place”, a.k.a. “Everything in its place” station for what you’ll prep. For example, instead of diving into the recipe and prepping ingredients as you go you’ll prep everything before and then simply add everything together when it’s called for.

Finally, it’s time to start prepping. A great place to start is by dividing out the components in pieces of MyPlate and allowing them to choose what item they want on what day. There are many good items you can prepare in advance for lunch and snacks

• Protein: hard boiled eggs, nuts, sliced deli meat
• Fruit: cut apples or pears, grapes, clementines, fruit pouches
• Veggies: prepackaged carrots, celery, cucumber, hummus/ranch/guac dips
• Dairy: individual milks, cheese sticks, drinkable yogurts
• Fun Foods: granola bars, mini candy, bear-yos roll-ups

There are also items you can prep for quicker dinners during the week

• Cooked grains such as rice and pasta
• Baked sweet potatoes
• Roasted veggies
• Beans – especially if cooking from scratch
• Batches of meats such as chicken can also be prepped but you may want to use less seasoning so they can be added to any dish later.

One of our favorite meal times is one with little prep. Boiling a bag of noodles and thawing a few frozen veggies is always a meal prep win.

1 lb shrimp, steamed at seafood counter

1 bag Signature Kitchen Frozen Peppers and onions, defrosted in fridge

1 medium zucchini

1, 5oz box spinach

1 package KA–ME Chinese Noodles

1/3 cup Far East Teriyaki Ginger Sauce

2 Tbsp. toasted Sesame Oil

Optional: Chopped green onion, sesame seeds

How It’s Made

1. Pick up the shrimp from the seafood counter and ask them to steam it for you and when you start making this dish set it out to let it start coming to room temperature

2. Boil noodles according to package directions

3. Dice and saute zucchini

4. Add in peppers and onions and cook out any additional water

5. Add in spinach and wilt completely

6. Toss in shrimp and noodles

7. Add in sauce and oil and mix to combine

8. Top with green onion and sesame seeds as desired

“Our families need to be very cognizant of the protocols that are in place. We want all of our students to come back to school in person so we ask that our families please follow the COVID guidelines. Wear masks, practice safe and healthy hygiene with regard to hand hygiene, washing hands, etc. We want to make sure that our students are healthy so that they can come back to school.”

Albany has been categorized as having a “high” COVID-19 transmission rate, joining a Centers for Disease Control and Prevention list that includes Saratoga, Schenectady, Rensselaer, Dutchess and Westchester Counties. Albany Mayor Kathy Sheehan:

“You know, we have to figure out how we live with the fact that this virus is here, and we need to be encouraging vaccination.”

North Colonie Superintendent of Schools Joseph Korr says the district is committed to in-person instruction for all students, five days a week.

“We as a district and we as a region, yet have not issued a final guidance document and made final decisions. But the reality is very clear. Right now the Delta variant really complicates matters and lacking official guidance from the New York State Department of Health other than the fact that we’re urged to follow CDC guidance. You know, we essentially have to work collaboratively to do this.”

Officials are advising parents, students and teachers to check their district and school websites frequently for any updates or changes to plans or policies.

Governor Andrew Cuomo encouraged districts to mandate vaccines for school employees including teachers, which Randi Weingarten of the American Federation for Teachers now supports. The New York State United Teachers said earlier this month it did not back a vaccine mandate.

The Choctaw Central Warriors are going back to work as they try to improve on last season’s 2-6 record.

The Warriors earned a place in the playoffs and battled Pontotoc before dropping a 38-24 season.

The COVID-19 pandemic kept things up in the air last season. Coach Pepper Posey said he and his assistant coaches have been mindful of the threat of COVID-19 and the different variants. At the same time, he said participation has been good.

“We had a pretty good summer,” Posey said. “We lifted weights for most of the summer and had good participation. Between junior and varsity, we have 60 out. That was one of the things when I was hired, we wanted to do, get the numbers up.

“We have some mini-camp workouts to see where we are. We are ready to get started.”

According to the Mississippi High School Activities Association, fall practices start Monday, Aug. 9. Teams will be allowed to play a jamboree/ scrimmage game on Aug. 20, and the season kicks off Aug. 27. The Warriors will play in the East Central jamboree. Choctaw Central started its season at Union.

Posey said the Warriors will return seven starters on offense from last year. However, the player losses were on the offensive line.

“We are going to be young on our offensive line,” Posey said. “We lost eight out of 11 starters on defense. We are going to see what some of our younger guys can do but we will have some guys going both ways.

“Our focus right now is finding the guys who are going to fill these open positions.”

The Warriors went to several camps over the summer, including Mississippi State.

Posey said making the playoffs last year was a plus.

“No one gave us a chance and we were leading at halftime,” Posey said. “We gave them a run for their money. It showed our kids they could compete.”

The Warriors compete in the tough Region 4-4A along with Louisville, West Lauderdale, Kosciusko, Northeast Lauderdale and Leake Central.

COLUMBUS, Ohio- Public school advocates who plan to sue Ohio over private school vouchers say the recently passed two-year state budget contains more money and programs for private and home schools.

The advocacy groups – Vouchers Hurt Ohio and the Ohio Coalition for Equity and Adequacy of School Funding – say the budget is being reviewed by their attorneys at the Cleveland law firm of Walter Haverfield.

They believe the provisions funnel state money away from public schools and will make their case – which has been in the works for months before the budget passed and involves over 70 school districts – against the state stronger, said William Phillis, executive director of the coalition. Phillis was involved in the DeRolph v. Ohio case spanning 11 years in the 1990s and early 2000s that resulted in the Ohio Supreme Court declaring the state’s public school funding system unconstitutional.

Among provisions in the budget dedicated to private and home schools:

-An increase in the maximum voucher scholarship amounts from $4,650 to $5,500 for grades K-8 and $6,000 to $7,500 in grades 9-12.

– A tax credit of up to $250 for instruction items for people who home school their kids.

-A tax credit of up to $1,000 for donations made to “scholarship granting organizations,” which are nonprofits that help low-income families of K-12 children pay for private school.

-Creation of the Afterschool Child Enrichment Educational Savings Account Program in which the state will give $500 if requested by households at or below 300% of the federal poverty line, which is $79,500 for a family of four. Private and home schooled children would be eligible, along with public school children. Money could be used for day camps, before- and after-school programs, the purchase of home school curriculum and materials, tutoring, music lessons, language classes, field trips to museums and theaters and other activities.

-Families can get a tax credit of up to $2,500 a year for tuition to send kids to a category of private schools known as “non-chartered, non-tax supported schools.” These usually religious schools choose not to participate in the voucher program. To be eligible for vouchers, private schools must obtain a “charter” from the Ohio Department of Education, which requires giving certain standardized tests, among other requirements that some parochial schools aren’t interested in. In the budget, there is now a nonrefundable credit for kids who attend these non-chartered private schools.

Phillis described many of these programs as gimmicks.

“The bottom line is these are foot-in-the-door tactics,” he said. “They wouldn’t start out with a full-voucher for home schools, but that will come. They didn’t start out with $7,500 with high school kids for a voucher. They started out with a modest rate and increased it incrementally until they’re full bloom.”

Phillis said vouchers started as a small project in Cleveland that grew.

“The vouchers cost taxpayers last school year $350 million,” he said. “And the total costs of vouchers since 2008 has been $2.5 billion.”

The attorneys working on the lawsuit will file it soon, Phillis said.

Phillis said that the case will focus on Article VI, Section 2 of the Ohio Constitution – specifically the first part: “The General Assembly shall make such provisions, by taxation, or otherwise, as, with the income arising from the school trust fund, will secure a thorough and efficient system of common schools throughout the state…”

But Ohio President Matt Huffman, who supports school choice, believes Ohio’s educational system will hold up in court.

“Remember, the language is ‘thorough and efficient,’” he said. “So ‘thorough’ means everyone has educational opportunities, and to me the educational opportunities that they can best choose from. And ‘efficient’ must mean, at the cost that is best to the taxpayer. So we’ve increased spending in the public school system, in the last 25 years, adjusted for inflation, by 50%. And we don’t even have as many kids in the public school system. And that’s not counting the $12 billion we’ve spent on school buildings. So how is it that someone could argue we’re not spending enough money on public schools? It’s really incredulous.”

Huffman defended the increase in the amount of the voucher scholarships, because it hadn’t changed in five years, he said.

“As with many things, the folks who have the ability financially to do what they want are getting a better product often in the public school. That’s why Relators put that: ‘Top-rated schools,’ that sort of thing,” Huffman said. “So if you can afford to move into the school district you want and if you can afford to pay for a private school, that’s all fine. But not everybody gets to do that.”

And even when the district is good, not every educational setting is the right fit for a child, he said.

That’s why it’s important for the state to help families that want to send their children to private schools. Education is essential to how far people will succeed in their life, Huffman said.

“We need to try the best we can to put everybody on fundamental footing,” he said.

Even though we are right in the middle of the hottest days of summer, fall and hunting season will be here before you know it. Now is the time to sort out your hunting gear and prepare for the upcoming season. A little preparation now can go a long way towards having a safe, enjoyable and successful hunting season.

A group of first responders are honoring people just like them.

The Brotherhood Ride is gearing up for a big trip in less than a month as they prepare to honor 26 first responders who died in the line of duty in Florida last year.

The group is also riding to mark 20 years since the 9/11 attacks.

The group was out training Friday morning at Trek Bicycles and road for about 60 miles.

The riders will bike from Naples to New York City, covering about 70 to 100 miles a day.

The group also made the trip 10 years to mark the 10th anniversary of the attacks.

“The experience we had when we rode into 9/11 was unbelievable to see the outpouring of support that we received from the local firefighters and police officers up there,” said Jeff Morse, battalion chief for the North Collier Fire Department. “Knowing that September 11th is such a big deal for them, you know we’re just a bunch of guys from Florida. Didn’t think we’d get much of a reception up there but everyone we ran into couldn’t thank us enough for doing it.”

The group leaves on Aug. 21 and will pedal about 1,700 miles for 23 days, getting to New York City on Sept. 11.
