Last weekend, I had the honor of starting the fire for the annual Salmon Bake at Central Oregon Community College. I used the flint and steel method, with indigenous tinder and wood. The idea behind the COCC salmon bake was to recreate, as much as possible, a gathering that would celebrate the return of the salmon upstream.

Salmon were as important to the northwest indigenous people as the buffalo were to the tribes on the plains. The annual salmon run, when the fish returned upstream to spawn,  was eagerly anticipated by the residents. For the duration of the run, which could be several weeks, the people harvested salmon, dried the flesh and socialized.

That tradition ended in the 1970s when the Bonneville Lock and Dam system flooded the Celilo Falls on the Columbia River.

“Celilo” is the name of a series of cascades and waterfalls on the river, as well as to the native settlements and trading villages that existed there in various configurations for 15,000 years.

All that remains of the salmon community is  memories. One way to keep those memories alive is through the ceremonies and gatherings, such as the COCC Salmon Bake.

Every year, the Native American Club at the college hosts the Salmon Bake, which features dancing, story telling and the keynote salmon feast.

The head cook for the event was Geraldine Jim, 75, ably assisted by her husband Wilford. Geraldine, of Warm Springs, Oregon, learned how to cook salmon from her grandmother, and the recipe and technique goes back thousands of years.

Celilo Falls was the site of massive salmon runs, where the fish would concentrate on their way upstream to spawn.

The technique is simple, Geraldine Jim said, and relies on some skill and the correct types of wood.

Here’s what you need, according to Jim:

  • A campfire made of hardwood. Alder is preferred, Jim said, because pine or other soft woods will smoke and cause the salmon to blacken with soot and taste bad.
  • Hardwood sticks, about three feet long and slightly curved. The bark should be removed.
  • Skewers, about 12 inched long, and about 1/8-inch think.
  • Filleted salmon with the skin still on.

Then:

  • Lay the fillet skin side down, and insert the long stick next to the skin and push it through.
  • Pin the fillet on the stick by pushing the skewer through the skin, through the flesh, then through the skin on the other side. Break off the ends of the skewers so they don’t catch fire.
  • Place the end of the stick in the dirt next to the fire. The distance from the end of the fillet and the ground should be about two hand widths.
  • Slightly tip the top of the fillet toward the fire. The fillet should be about two to three feet from the fire.
  • Cook about 45 minutes to an hour. When the fish is done, the skin will be dry.

Remove and feast. The taste is incredible, and unlike anything you’ve probably ever eaten. Until you’ve tried this, you only think you’ve eaten good salmon.

My nephew and I went for a hike in the woods behind my house today (Sunday June 2, 2013).  For a change all I took with me was a knife, my lifestraw and a canteen.  It was hot, and it didn’t take a long time to work up a thirst.

We came to a stream with brackish water coming out of a beaver dam.  As you can see in the pictures the water was that dark brown color that slow moving swamp water gets to be.  When I walked up to the stream frogs darted away from the edge and I knew I’d found a good test for the straw.

I made my way to the edge of the stream and stuck the straw in the water.  This one hadn’t been used before and it took about five or six good sips through the straw before the water started flowing.

After I was done drinking my nephew – the Boy Scout – said, “I want to try it!”

So I gave him the straw and he made his way to the same rock I used and tried it out.  That’s confidence in a product folks.

Anyway, the only downside of using the straw that close to the water is that you get the smell of the nasty water right in the kisser while you’re drinking.  If you can get by that hurdle the water itself isn’t that bad.

  • No knots or wavey grain.
  • Don’t get a piece too long – 12 to 18 inches is about right.
  • If possible, get old, dry wood. Green wood is harder to split, and some green wood, such as Mississippi gum, is virtually impossible to split green, even with an axe.

We’re going to baton with the knife using the “triangle” technique. It is just what it says: Start splitting out triangles. After you get out one triangle, arrange the knife so the next split is also a triangle.

If you split out four or five triangles and arrange them correctly, that should be enough to get your fire going.

Rattlesnakes are generally not aggressive and usually strike when threatened or provoked. Given room, they will retreat and want to be left alone. They are not confined to rural areas and have been found in urban environments, lakeside parks and golf courses.
 
The best protection against unwelcome rattlesnakes in the yard is to have a “rattlesnake-proof” fence. The fence should either be solid or with mesh no larger than one-quarter inch. It should be at least 3 feet high with the bottom buried a few inches in the ground.
Keep the fence clear of vegetation and debris. Encourage and protect kingsnakes, which prey on rattlesnakes, and other natural competitors like gopher snakes and racers.
On rare occasions, rattlesnakes can cause serious injury to humans. Most bites occur between the months of April and October when humans are most active outdoors. The California Poison Control Center notes that rattlesnakes account for more than 800 bites each year in the U.S. with one to two deaths.
 
CDFW recommends the following outdoor safety precautions:
  • Wear hiking boots and loose-fitting long pants.
  • Never go barefoot or wear sandals when walking through wild areas.
  • When hiking, stick to well-used trails.
  • Avoid tall grass, weeds and heavy underbrush where snakes may hide during the day.
  • Do not step or put your hands where you cannot see, and avoid wandering around in the dark.
  • Step ON logs and rocks, never over them, and be especially careful when climbing rocks or gathering firewood.
  • Remember, rattlesnakes can swim so never grab “sticks” or “branches” while swimming in lakes and rivers.
  • Teach children to respect snakes and to leave them alone.

What to do in the event of a snake bite:

  • Stay calm and wash the bite area gently with soap and water.
  • Remove watches, rings, etc, which may constrict swelling.
  • Immobilize the affected area and go to the nearest medical facility.

What you should NOT do after a rattlesnake bite:

  • DON’T apply a tourniquet.
  • DON’T pack the bite area in ice.
  • DON’T cut the wound with a knife or razor.
  • DON’T use your mouth to suck out the venom.
  • DON’T let the victim drink alcohol.

So when I got my new stove in the mail, I was really pleased, but didn’t particularly need it at the time. My wife had bought one of the standard Coleman camping stoves back in the early 80s and that stove had never let us down.

When we first moved to Boise, Idaho in 1990, we went camping very often. We found the Coleman twin burner to be the quintessential tailgating stove. It works well in a stadium parking lot or at a trailhead in the backwoods. We’ve used ours on my pickup tailgate to boil brats, fry fish, cook venison at elk camp and make countless pots of coffee. It has also been used to make charcloth, firestarter and melt lead. It always works. 

The dual fuel is also handy when it’s hot outside, and you don’t want to heat up the kitchen frying fish or bacon or boiling shrimp.  Take the stove outside and use it on the picnic table or the deck and heat, humidity and cooking odors are not a problem.

Here’s the stats on the dual fuel from the Coleman folks:

Even though I like propane a lot, I haven’t found the need to replace the Coleman. For some applications, such as cooking in extreme cold weather, a gas stove will light when a propane one may be more cranky.

Here are a few tips for making the dual-fuel stove work well.

  • Fill the tank the night before. That way, when you spill gas on your hands, there won’t be the odor on your fingers. Or, you could wear latex gloves during fueling. The gloves are cheap and keep your hands from getting that gas smell. One fill is usually plenty to cook breakfast and dinner that night, if you don’t have to simmer something too long.
  • Twirl the lever on the valve a couple times before lighting. This evidently cleans something, and makes it light easier.
  • When you shut off the stove, turn the valve to “off” and turn the valve lever to the “up” off position.
  • Carry a spare pump in your gear. The same pump also works on the Coleman gas lantern and gas backpacking stove. It is the most common part that needs to be replaced.
  • Use unleaded gas with no ethanol in it. Ethanol reportedly separates from the gas quicker, causing ignition problems.  I like to use a gas treatment in the stove gas so the fuel will last longer and burn cleaner.

Probably the big advantage to the multi-fuel over the regular Coleman double-burner is the ability to use standard gasoline in the multi-fuel. Regular Coleman fuel still burns cleaner, but  as this is written, unleaded gasoline is going for about $4 per gallon. Coleman fuel at the local Walmart was $9.70-something. The stove won’t work on diesel or kerosene.

Obviously, gas is cheaper. And if your vehicle, lantern and stove are all powered by the same fuel, that cuts down on things you have to take along.

I like things that work and the Coleman 2-burner Duel Fuel Powerhouse Liquid Fuel stove fits that category. You probably need one.
